It all depends on your IMAP server and what level of security you want 
to impose.

Cyrus 1.6.1-BETA supports sieve which is a fairly good sorting
language.  It is not nearly as powerful as procmail, but should work
for most.

You can also use procmail and have it call the 'delivery' program for
whatever IMAP server you are using.  For cyrus this would be deliver
(and must be called with the privs of cyrus -- so either suid or run
procmail until the cyrus ID, either of which is dangerous unless it is
your personal desktop).  Other IMAP servers should have a program you
can run to put a message into your message store.
